"Thanks for doing a great job sharpening my 2 good and one not so good knives, and explaining the differences in their construction. Sabatier v. Chinese knives = no contest. I have had the Sabatier knives since 1984, and I will take your advice about their care. My friend in Hudson, with whom we stay when we are here, told me about you, and I brought my knives with me from NYC. I will see if any of my other knives need sharpening, and also ask friends if they need their knives sharpened. It is hard to find good people to sharpen knives in Manhattan.”
